Sweet Cinnamon

Organic Sweet Cinnamon aka, True Cinnamon, Ceylon Cinnamon, Honey Cinnamon, or its Latin name Cinnamomum Zylanicum or Cinnamomum Verum is the world's only "true cinnamon".  Different from the cinnamon we all know here in America, Sweet Cinnamon is enjoyed by Europeans, by dignitaries and royalty throughout the world.   Try our Sweet Cinnamon, and we're sure it will bring special delight even to the most discerning of cinnamon connoisseurs.  Scroll down to read our story "Blessings to Share".

Saigon Cassia Cinnamon

Organic Saigon Cassia Cinnamon grows in the north of Vietnam (not just Saigon) but is known here in America as Saigon Cinnamon.  The climate in the northern part of Vietnam (and South China) allows this cassia tree to produce a much higher oil content, approximately 5-7%, giving the "hot cinnamon candy" taste.  The bold and hot taste of our Saigon Cinnamon is great in rolls, cookies, breads, but also interesting in Mexican and oriental cooking.  For a special taste, try sprinkling on and mixing in vanilla ice cream.  Try the bold taste of our Saigon Cinnamon.  Experiment, and we hope you thoroughly enjoy!

5 Part Harmony
(Our James Creek Sutlery Exclusive Blend)

In our family we all like cinnamon.  Some enjoy the Burmannii Cassia, some enjoy the Sweet, and yet some enjoy the Saigon Cassia.  To bring two of these worlds together in a glorious blend we have created Five Part Harmony.  A perfect ratio of the "citrusy" Sweet Cinnamon, "warm & full" Burmannii Cassia Cinnamon, Cloves, Allspice and the world's third most expensive spice - Cardamom.

All five are hand selected and start out whole in our kitchen for the freshest of flavors.  Next, we cool grind and hand sift, keeping their precious essential oils intact.  Lastly, our blend is bottled and corked, allowing for their oils to breathe and remain vibrant, ready to use for the next recipe.

Whether sprinkling CINNAMON on top of:

oatmeal
brownies
butternut squash

fruit salad
rice pudding

Blessings to Share

When we started bottling our sweet cinnamon
and cassia,
we did not know how much a shekel was.

After the Lord brought our little bottles to us,
He revealed that a shekel
is approximately
2/5 of an ounce,
or 0.40 ounces.

Our Sweet Cinnamon bottle
holds 0.40 ounces, a shekel.

This has been a wonderful blessing to share at markets how God is even in the little things in our lives.
